What exactly are Rubs?

For those of you unfamiliar or uncertain with what Rubs are and do, I'll give you our take on it. Rubs are elaborate spice blends used to coat meats before grilling. They've been used for eons, in every region of the world, to enhance the flavors of cooked meats. Some say Rubs are like dry marinades, and in many regards, they are. They tenderize, they infuse, and they fortify. We at Bearboy Gourmet don't believe that rubs are married to a particular cut or type of meat. The concept of a chicken rub is just ridiculous to us. If the rub has good flavor, use it with whatever kind of meat or fish you like. Right?

Should Rubs only be used on meat?

No, not necessarily. I think by defintion they are intended for the grill but not exclusively meats. In fact, some halved zuccini, drizzled with olive oil, coated with the Roman Rustica, and grilled, is super tasty. The reality is, use it how you want to. We've got friends who flavor their scrambled eggs with the Aztec and others who always add a hearty fistful of Eurasian Rub to oven roasted potatoes.
